In 2025, Arepas Caribbean Food will open its first brick-and-mortar restaurant, Tayrona, located at 956 Cherry Street in Louisville, CO.

This exciting new space will feature both indoor and patio seating, an expanded kitchen, and a menu that brings together traditional Caribbean recipes with locally inspired fusion dishes. It’s a big milestone—and it’s just the beginning.

The founders of Arepas Caribbean Food have always focused on the experience being more than just a meal—it’s been a celebration of tradition, community, and the vibrant spirit of the Caribbean. What started in 2015 as a single tent at a local farmers market has grown into two beloved food trucks serving the Boulder County area. And now, this homegrown venture is ready for its next big step.

Here’s what the team behind Tayrona has planned for this next chapter:

Grilled Chicken Skewers

1. Launch a Permanent Location
Tayrona will offer a fun mix of Latin and Mediterranean flavors. Straight from the coast, with love. At Tayrona, you’ll experience Latin flavor with a Mediterranean soul. It will provide a welcoming space for friends, families, and food lovers alike. Designed with comfort and connection in mind, the restaurant will elevate the Arepas experience you love while staying true to its street food roots.

2. Celebrate Latin and Mediterranean
From the flavors on your plate to the rhythms in the air, Tayrona will offer a full cultural experience, bringing a taste of the Mediterranean to Colorado through food, music, and hospitality.

3. Deepen Community Ties
The owners have always been community-focused. With the new restaurant, they’ll continue to cater local events, collaborate with nearby businesses, and stay involved in the neighborhoods they serve.

4. Create Local Jobs
The new space means new opportunities. Tayrona will hire and train a diverse team, offering meaningful jobs and pathways for growth, all while supporting the local economy.

5. Build a Sustainable Future
This expansion isn’t just about now—it’s about what’s next. The goal is to create a thriving, scalable restaurant model that can grow in the future, without losing the heart and flavor that started it all.

Tayrona is more than a restaurant. It’s a gathering place. A cultural hub. A flavor-packed dream come true. And it’s coming to Louisville in 2025. Stay tuned for more updates—and get ready to taste what’s next.
